Red sauce ' langouste'

Hello everyone I hope you're all doing extremely well. It's been a while since I posted...well am back! For the moment all the beach hops has put me in such a 'beach everything' mood. We just got fresh crayfish so we decided to do my mum's version of a 'sauce rouge'.I hope you like it !

For the ingredients you'll need :

Crayfish
1 onion
3 cloves of garlic
Tomato puree
3 Pepper ( of your choice)
Salt and pepper
Lemon juice
Olive oil

First things first, season the crayfish with salt and pepper.Squeeze fresh lemon juice all over the crayfish to add extra tenderness to its meat.
  • In a hot chinese wok add olive oil.Let the oil heat the add the crayfish and immediately cover with a lid. After 3-4 mins remove from the wok and set aside. That's how it should look like.
  • In a big saucepan, add the chopped onion and garlic to some olive oil.Allow to slightly fry then add the tomato purée.
  • Whilst the tomato sauce is cooking chop finely some pepper, fry very slightly over medium heat before adding them to the red sauce.

  • Add salt, pepper and a pinch of sugar to the sauce.Let simmer for another 5-7 mins.
Last but not least add the stars of the show! How good looking !

I added some fresh herbs on top.
This sauce tastes so unique. We accompanied it with some rice and hot chilli sauce. You definitely need to try this so yummy.

Ça donne l'eau à la bouche. Bon apétit🍴

Love,
The inspired Islander.
